  • 1 large onion (chopped)
  • 2 cloves garlic (minced)
  • 1 medium red bell pepper (diced)
  • ½ teaspoon dried oregano
  • Salt and pepper (to taste)
  • 2 cups beef broth (low sodium)
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 10 ounces noodles (such as egg noodles)
  • 1 cup sour cream
  • 2 cups cheddar cheese (shredded)
  • 1 cup Parmesan cheese (grated)
  • 1 tablespoon olive oil
  • Fresh parsley (chopped, for garnish)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add chopped onion, minced garlic, and diced red bell pepper, and sauté until softened.
  • Add ground beef, cook until browned. Season with oregano, salt, and pepper.
  • Stir in beef broth, Worcestershire sauce, and heavy cream. Let the mixture simmer for 5 minutes.
  • Cook noodles according to package instructions. Drain and add to the beef mixture.
  • Stir in sour cream, half the cheddar, and all of the Parmesan cheese. Mix well.
  • Transfer the mixture into a casserole dish, sprinkle the remaining cheddar cheese on top.
  • Bake for 20-25 minutes until the cheese is melted and bubbly. Garnish with chopped parsley before serving.
