  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (28 oz) crushed tomatoes
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 tsp minced garlic
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1 cup pasta (shells or ditalini)
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  • Place chicken breasts in the crockpot.
  • Add chicken broth, crushed tomatoes, onions, carrots, celery, garlic, basil, oregano, and red pepper flakes.
  • Cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
  • Remove the chicken, shred it with two forks, and return it to the pot.
  • Add pasta and Parmesan cheese. Stir well and cook for another 20-30 minutes until pasta is tender.
  • Season with salt and pepper, garnish with fresh parsley or basil, and serve warm.

Notes

  • For a creamier soup, stir in 1/2 cup heavy cream or 4 oz cream cheese at the end.
  • Use gluten-free pasta if needed for dietary preferences.
  • Store leftovers in the refrigerator for up to 3 days.
