  • 4 large russet potatoes
  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1/4 cup beef broth
  • 1/2 cup shredded Gruyere cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp fresh thyme leaves
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub the potatoes, prick with a fork, and bake for 1 hour or until tender.
  2. Meanwhile, heat butter and olive oil in a skillet over medium heat. Add sliced onions and cook for 20 minutes, stirring occasionally.
  3. Sprinkle sugar over the onions, stir, and cook for another 10 minutes until golden and caramelized. Add beef broth and thyme, simmer until the liquid reduces.
  4. Remove baked potatoes, let cool slightly, then slice in half lengthwise and scoop out the centers.
  5. Mix the scooped potato flesh with caramelized onions, half the cheese, salt, and pepper.
  6. Spoon the mixture back into the potato skins, top with the remaining cheese.
  7. Return to the oven and bake for 10-15 minutes until the cheese is bubbly and golden.
  8. Garnish with fresh thyme and serve hot.

  • For a vegetarian version, use vegetable broth instead of beef broth.
