4 boneless, skinless chicken thighs
1 lb baby potatoes, halved
3 tbsp olive oil
4 garlic cloves, minced
1/3 cup grated parmesan cheese
1 tsp paprika
1 tsp dried Italian seasoning
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Heat 2 tbsp olive oil in a large skillet over medium heat.
Season chicken thighs with paprika, salt, and pepper, then sear on both sides until golden brown. Remove and set aside.
In the same skillet, add remaining olive oil and cook the baby potatoes until crispy and tender, stirring occasionally.
Add minced garlic, stir, and cook until fragrant.
Return the chicken to the skillet and sprinkle with parmesan cheese and Italian seasoning.
Cover and cook for an additional 10 minutes, or until the chicken is fully cooked and tender.
Garnish with fresh parsley before serving.
